Makes 2 servings
2 boneless, skinless chicken breasts
2-3 cloves peeled black garlic, minced or run through garlic press
2 tablespoons brown sugar
2 teaspoons olive oil
Preheat oven to 500 degrees (F). Lightly grease a casserole dish with cooking spray or vegetable oil. In a small pan, quickly sautee black garlic in olive oil until starting to fall apart (it won’t take long). Remove from heat and add brown sugar. Stir thoroughly (I used a small whisk) to get as mixed as possible. Place chicken breasts in greased casserole. Pour garlic/sugar mixture all over chicken. Salt and pepper to taste. Bake uncovered 15-20 minutes. I used a brush to swab some of the sauce from the dish onto the chicken, a few times. Check for doneness, remove from oven, reserve sauce left in dish. I cut the chicken into large slices. Serve with sides, drizzle with sauce from casserole and enjoy!
