Salmon Atop Mushrooms with Teriyaki and Black Garlic

salmonWe like to have a “fish night” at least once a week and last night it was salmon – beautiful, little fillets on a bed of mushrooms with sliced red peppers, flavored with teriyaki and black garlic. The picture presented here is not the best, but this dish was delicious! The act of cooking the salmon, while it sat on the mushrooms seemed to work well to keep the salmon moist but firm. We served the dish with some wild rice – give it a try!

1 pound sliced mushrooms
3 tablespoons black garlic oil (see recipe below)
4 salmon fillets, about 6 ounces each
1/2 cup red peppers, thinly sliced
1 teaspoon dried thyme
1 teaspoon dried parsley
Teriyaki sauce, bottled

Preheat oven to 350 degrees (F). Lightly grease or use cooking spray on large casserole dish or lipped baking sheet. Place mushrooms in bowl with black garlic oil and stir to combine thoroughly. Arrange mushrooms in single layer on dish or sheet. Season salmon fillets with salt and pepper and place on top of mushrooms. Distribute red pepper slices around salmon. Sprinkle with thyme and parsley, then drizzle with several generous shakes of teriyaki sauce. Bake about 25 minutes, or until desired doneness. Serve with rice or couscous.

1/4 cup olive oil
1 large peeled black garlic clove, minced or run through garlic press
1 teaspoon dried parsley
1/4 teaspoon ground thyme

Combine ingredients in small bowl and mix well. Discard any leftover oil, after using.
